Easy Recipe for Chocolate Goji Berry & Chia Seed Pudding

This decadent chocolatey pudding is one of my favorite desserts to entertain with. Once hydrated, chia seeds create a luxuriously creamy texture while the goji berries provide a chewy surprise, not to mention a major antioxidant punch! Enjoy this gut-friendly dessert!

Yields: 2

Ingredients

  • 1/4th cup plain Greek yogurt (probiotic)
  • 1 1/2 cups nut milk of choice
  • 3-5 TBSP maple syrup & 1 tbsp reserved for yogurt
  • 1 tsp 100% pure vanilla extract
  • ¼ cup + 2 TBP chia seeds (prebiotic)
  • 1/4th cup cocoa powder
  • 1 TBSP dried goji berries
  • 1 TBSP unsweetened dried coconut (prebiotic)

Directions

  1. Whisk together all ingredients except the goji berries, yogurt and coconut. Refrigerate for at least 6 hours (overnight is best).
  2. Next mix together Greek yogurt and 1 tsp maple syrup. In a clear cup or mason jar, spoon in chia seed pudding and top with sweetened Greek yogurt and sprinkle with goji berries. Add another layer of chocolate chia mixture then top with goji berries and coconut.
